Cinnamon Infused Whipped Cream

Happy 2021!!! I wanted to start the year off by changing up a recipe I've shown you before. I'm making classic homemade whipped cream but infusing it with cinnamon. Over the holiday my mom gave me whole cinnamon sticks which I thought would be the perfect way to test this method out. The taste kind of reminds me of arroz con leche which is a Mexican rice pudding.


Let's get started!!

First, put your heavy cream in a saucepan and heat it on medium-high heat until just before it starts getting to a rolling boil (bubbly). Then remove it from heat and add in the cinnamon sticks. Break them as you add them in. Let the mixture steep for 30 minutes. Strain the cream into a container and chill in the fridge for at least 3 hours.

Pour 1 cup of the cream into a bowl and add in the sugar. Whip until soft peaks begin to form. Don't panic if your whipped cream breaks. Put it back in fridge with the leftover cream and chill for another hour. Take it out and pour a little bit of the cream into the broken whipped cream. Whip it again and it should turn into a fluffy whipped cream.
