This drink is called "magic" because it changes colors. There's a simple trick that makes this happen and it can be replicated in alcoholic and nonalcoholic drinks. The secret is blue butterfly pea flower powder. You can find the one I used here: https://amzn.to/3dOKh2q
Here's a little food science for you. Acidic things like lemon and lime juice create a chemical reaction that changes the blue to a pink-ish color. To make it easy to add to any acidic drink we're gonna make a blue butterfly pea flower simple syrup. I'll be adding mine into lemonade today.
Let's get started!!
Start by combining the water, sugar, and blue butterfly pea flower powder together over medium-high heat until it reaches a light boil. Take it off the heat and let it steep for 30 minutes. Put it into a mason jar and chill it in the refrigerator until ready to use.
To get the desired effect, start with the lemon juice in a cup. Add in the syrup and stir. The color will begin to change from a dark blue into a pink-ish purple. Add in the water to dilute the lemon juice for a tasty lemonade. If you try this with other drinks, make sure to add them separately or it won't work.
